No Bake Granola Bars

Super-de-duper easy granola bar recipe that is one of my family's favorites.  One batch barely lasts one day around here - my little chef and I made a batch this week & I had to make another the very next day because it disappeared so quickly!  Comes together quickly which I  love, and so easy to make that my kids always get to help.  : ) 

No Bake Granola Bars



Ingredients :

2 1/2 cups crispy rice cereal
2 cups quick-cooking rolled oats
1/2 cup firmly packed brown sugar
1/2 cup light corn syrup
1/2 cup peanut butter
1 teaspoon vanilla

Optional Add-ins:

1/2 cup raisins
1/2 cup Craisins
or
1 cup chocolate chips, butterscotch chips, peanut butter chips ~ whatever your favorite is, or combo - you see by the pic what our favorite is ; )
1/4 tsp. cinnamon


Directions:

In large bowl, combine cereal, rolled oats and raisins; set aside.

In small saucepan, combine brown sugar and corn syrup.

Bring to a boil, stirring constantly.

Stir in peanut butter and vanilla; blend until smooth.

Pour over cereal mixture; mix well.

Press into greased 13"x 9" pan.

Cool; cut into 24 bars.


I've tried replacing the corn syrup with honey for a more healthful addition, but they didn't firm up as well and were sweeter than we liked.  If you try another sweetener successfully, please let me know ~ I'd love to try it, too!

These look like something my daughter would enjoy. I'll be checking back to see if anyone successfully uses something other than corn syrup, although I probably have enough corn syrup here to make a batch this afternoon.

Looks like a good one. I'll have to give it a go but might have to make some substitutions like golden syrup instead of corn syrup.
