Cheeseburger Pizza ~ Kid-friendly Recipes ~ Fun in the Summer Sun Link-Up

Welcome to the 2nd week of our Fun in the Summer Fun event!  Each Monday until September 7th,  Mama to 4 Blessings along with:

Cheeseburger Pizza:
Sausage Cheeseburger Pizza (Cooking for Kids - Southern Living at Home Ckbk)
*made this way, it tastes much like a Krystal

1 lb. Bob Evans Original Recipe Roll Sausage (or lean ground beef or turkey)
1 (12 inch) prepared pizza shell
1/2 cup yellow mustard
2 cups (8 oz.) shredded mozzarella cheese
1/2 cup chopped onion
15 dill pickle slices
3/4 cup (3oz.) shredded cheddar cheese

Preheat oven to 425. Crumble and cook sausage in medium skillet until browned; drain well on paper towels. Place pizza shell on lightly greased 12" pizza pan on baking sheet. Spread mustard over shell; top with mozzarella cheese, sausage and onion. Place pickle slices evely on top; sprinkle with cheddar cheese. Bake 12 min. or until crust is cooked through and cheese is bubbly. Cut into thin wedges and serve hot. Refrigerate leftovers.

Makes about 8 servings.

Altered Version(pictured)

I ususally don't use the mozzarella when making it this way and use 8 oz. of cheddar cheese instead. Follow above instructions, using your choice of meat. I chop 1/2 cup onion and cook it with the meat because the kids like it better when the onions are softer - I like it either way. On top of crust (we usually make our own instead of the prepared), spread a layer of ketchup (maybe 1/3- 1/2 cup); I have put it on the pizza sometimes, and other times have served ketchup on the side - the family likes it either way and I haven't decided yet which way I like it best, then a layer of mustard. Add cooked meat, pickles, about 1/2 - 3/4 cup chopped fresh spinach and approx. one tomato, thinly sliced. Top with shredded cheddar cheese. Bake as directed above.

Pizza Dough:
Just in case you want to try making your own, too!  Makes enough for 2 pizzas; we double the above recipe because 1 pizza isn't enough for our family. ; )

1/2 Tbsp. dry yeast
1/8 c. warm water
1 1/4 cup milk
1/4 cup sugar
3/4 tsp. salt
Approx. 5 1/2 cups flour
1 egg, slightly beaten
1/4 cup oil

Dissolve yeast in warm water.  Heat milk to warm (110-115 degrees).  Add sugar, salt, and yeast to milk.  Gradually mix in 2 cups flour.  Add beaten egg and oil.  Mix well, then add remaining flour, until you have a soft dough, kneading well.  Cover with a damp cloth and let rise until doubled.  Punch dough down and let rest for 10 min.  Divide in half and spread each half on a greased and floured 12 in. pizza pan.  Add favorite toppings.  Bake at 400* for 15 minutes; add shredded cheese and bake 5 min more until cheese melts.

Confession:  this was on our menu for last week, but these photos are about 2 yrs. old.  We had a crazy busy week and it got pushed to this week's menu instead.  Bad blogger ~ but look how cute my Ashlyn was! ; )  This is one of her favorite recipes!

Homeschool Mother's Journal & A Boys' Fleece Blanket Update

In my life this week…

Organizing, cleaning, working on Sweet Diva orders =) , planning for next year, and basically trying to manage all the things I/we moms juggle while not to tripping on all the "balls" I drop along the way ; )


In our homeschool this week…

Ashlyn has had the week off due to her choir tour/missions trip, my boys and I worked on Spelling, Language Arts & Math.....which included a Tic-Tac-Toe Spelling Competition:




 {it's a non-stop party around here!} =)


My favorite thing this week was…

The homecoming concert by the Middle School choir at church on Wednesday night

Questions/thoughts I have…

When playing Tic-Tac-Toe, why does the Cat always get the game when no one wins?  Why not the dog, or the rabbit, or the hamster?



Things I’m working on…

embroidered towel sets for a ♥sweet♥ customer, new items for my Etsy shop, selling old curriculum & buying new, painting (rooms), and trying to figure out which extra activities we will have time/funds for this coming school year


I’m grateful for…

a piano teacher who misses my children and wants them back =)


I’m praying for…

funds to make the above possible, plus wisdom in choosing and how to manage everything I want my children to do vs. everything they want to do

If you happened to visit my blog Monday, you know that my daughter talked me into letting her make a very cute fleece blanket last week, and that her brothers also talked me into buying fleece fabric for them.  We couldn't decide whether the way she made hers was too feminine......but my 9-yr. old decided to go ahead with it and was happy to oblige my documentation =) :

He likes it!  We think it turned out just fine!


His 11 yr. old brother also ended up with a completed Gator blanket, but I can't say for sure who made it. All documentation and photos are hereby sealed under the Pennington family confidentiality agreement due to reputation preservation. =)

She's Sweet, She's Sassy and Oh-So-Strong-willed......

.......and I'm so glad she's ♥home♥!

We wanted her to know she was missed, so we gave her a grand homecoming.... =)



....and worked very hard on her Welcome Home poster!

We hung it on her door, giggling about how surprised she would be to see it.



For those of you who REALLY follow my blog, you know that my Ashlyn has been away on a Middle School Summer Choir Tour/Missions Trip.  For five days, our group from church has served and ministered to others, witnessed and reached out with Christ's love, and grown their relationships with the Lord by putting their faith into action.

They started off their trip by enjoying a super fun day at  Disney's Blizzard Beach, then traveling to Venice, Fl. to serve, sing, and reach out to others in the local community.  Our kids canvased neighborhoods, going door-to-door inviting people to church, distributed information on the upcoming VBS at FBC Venice Beach, sang in church services there and at Southside Baptist in Sarasota, sang at assisted living centers and ministered to residents there, and served at the Center of Hope.  On their last day there, they enjoyed going to Siesta Key Beach, where they swam and spent much time taking every opportunity to witness to others.  You can read even more about their trip here.

Last night, we were treated to a homecoming concert during our Wednesday evening church service:
  

As a worker in the choir {who wasn't able to go on this trip = ( }, I can honestly say they have never sounded better.  I was so blessed by how they sang from their hearts, and by hearing testimonies of how God used them on the trip.....and how He changed them. =)



How thankful I am for a church who invests so much into my children!!  I listened all the way home to my daughter talk 90 miles/minute about the trip.....and about how she talked to others about Jesus, about how the group felt so united in their mission and about how different everyone was because of it!

How thankful I am for that strong-willed spirit! 

Say what?

I know, I know......not exactly the attitude most have about their strong-willed children. ; )

They challenge us ~ a lot.  They can exasperate us.  Much.  But each day when I look in the mirror, I am reminded that just as she is not perfect, neither am I.  Just as God is never finished with me, He is never finished with her.

I am thankful that as strong as that sassy side is that only those closest to us get to see, there is that genuine sweetness and compassion that she possesses.  There is a desire within her to follow Him,  to do the right thing, to do much good......and while I often wonder if she desires such things because she has been raised that way and is immersed in a lifestyle that encourages it or whether she has made it personal within her own heart, I am trusting her future in the One who created her.

I believe that the attributes we possess that society says are negative can  be a tremendous positive when placed in the hands of the One who works all things for good.   He makes no mistakes in the gifts He gives us.  How many people do you know who see a strong will as a gift?  It's all about perspective.....and a Bibical world view really helps, too.  ;)

When you learn to look at everything through the light of that Eternal lens, He'll show you, too. 

He gave my girl that strong will to use for His Glory.  That's what I tell her when she gets mad at herself for losing control of it.  Satan wants to use our gifts ~ esp. our strongest ones ~ for himself, and learning to redirect that sin nature that he uses to do so is not easy.  That strong will that tends to cause so much trouble, though, can be her greatest strength.  It can give her a steadfast faith that is not easily shaken and it can allow her to do great and mighty things for His Kingdom!  I pray it will be so in her life.

And so I call on God's promises for her, that "He who began a good work in her will carry it on to completion until the day of Christ Jesus" {Phil 1:6, slighly paraphrased ; ) }!

Am I saying that being blessed with a strong-willed child is an easy task?  Are you kidding me (I actually have 2!!) ?!  If it sounds like (or reads like) I think I know what I'm doing, don't be fooled.  I haven't got a clue.  I wasn't raised the way I'm trying to raise my children.  I'm just trying to do my best for them through Him along the way.

She's sweet, she's sassy and Oh-So-Strong-willed......and I'm so glad she's home.  And so thankful that He trusted me with her.....I'm so glad she's mine. ♥

For five days, I lived in a boys' world (and thoroughly enjoyed my time with them)......and now the family scales have shifted back into balance.  You might think in a family of five that 3 males and 2 females are not a balanced equation.  Being such a strong-willed gift, she counts for two ~ HA!!!

284.  A nine year old, all set to head to the grocery store with me ~ "I'm ready to handle the smoke!", he said (due to nearby fires).


285.  A rainy afternoon (while we need a lot more, I'm thankful for the little we got)

286.  An *awesome* Middle School youth pastor, who faithfully loads pictures and videos onto facebook and sends frequent text updates of our kids who are singing, serving and telling others about Christ's love for them on their mission trip/choir tour!

287.  My not-such-a-baby girl, who comes home tonight! =)

In honor of what our Middle School group has been doing this week, and this past Sunday's sermon on reaching others for the cause of Christ, my Mustard Seed Planting verse this week is:

Hoo Are You???

1. What is you favorite summertime snack?

fresh fruit on top of vanilla Greek yogurt when I'm being good....
ice cream when I'm not =)

2. Do you tan at all? (tanning bed, outside, spray, etc)

yes, but I lose it more quickly than some members of my family.....my husband, daughter, and youngest son turn into Bohemians and keep their tan for a long time.  I can get dark, but lose it more quickly.....and now that I'm getting OLD, I'm a lot more concious of damage =)

3. What is your favorite activity to do outside?

beach or pool.....must have water in this heat!

4. Do you recycle?

Why, yes....we do!

5. How hot is it where you live today?

Suffocatingly.....forecaasted high today was 95, but I think it was hotter!  I saw a friend who lives near me post a photo of her car  temp. reader at 105!  Plus, lots of smoke and ash falling from nearby fires.  Please send rain!

Why Do They Call It a Jon Jon Anyway?

Several weeks ago I made the cutest little appliqued crab t-shirt for one of the ♥cutest & sweetest♥ little boys I know......




.....and I also made his baby brother a matching Jon Jon after I posted about it.  Being a good Etsy-er/Blogger/Entrepreneur, I took some really cute photos of that Jon Jon....some by itself and some of the matching items together.

My daughter, however, borrowed my camera to use for her 4H Historian duties a couple of days later ~ and accidentally deleted the pictures......but, not all of the pictures.  Only the few I took of the Jon Jon, which happened to also be the only pictures I hadn't transferred to my computer yet.

And so, I thought I was out of luck in documenting that cute little project.  I got a request, however, to fix the hem that didn't quite catch on that ♥sweet♥ little outfit a week or so ago, and although my perfectionistic self normally would hate to see a project come back to me {once I'm done with something I want to be done with it and don't want to mess with it anymore ; ) }, I took the opportunity to replace those lost photos. =)




How cute is that?!  I think it's VERY.  I wonder if I like making baby items so much these days because my own kids are getting so very big?  I think probably that's it.  Plus, baby items are just doggone cute, don't ya think?

I'd still like to know why these are called Jon Jons, though.  It bewilders and befuddles me.  Befuddles.  I learned that word by reading a lot of Beverly Lewis' Amish fiction.  It's kind of fun to say.  Try it......because words that are fun to say sometimes make you smile. =) =)

Random, I know.  I just am sometimes. ; )
